Yes. Contacts are matched by email, so an existing customer in Salesforce is updated rather than a second one appearing.

Which contact in Salesforce does the information from Wix land on?

The contact that matches on email. If it does not exist yet, it is created with the details that come across from Wix.

What happens on a refund or partial cancellation in Wix?

It comes across, so Salesforce matches what was actually settled and you correct nothing by hand.
