Yes. Contacts are matched by email, so an existing customer in Salesforce is updated rather than a second one appearing.

Which contact in Salesforce does the information from Typeform land on?

The contact that matches on email. If it does not exist yet, it is created with the details that come across from Typeform.

How are the Typeform fields mapped to Salesforce?

You set once which field from Typeform belongs where in Salesforce. After that every new submission lands in the right place automatically.
