Yes. Contacts are matched by email, so an existing customer in Salesforce is updated rather than a second one appearing.

Which contact in Salesforce does the information from Jira land on?

The contact that matches on email. If it does not exist yet, it is created with the details that come across from Jira.

From what moment in Jira does something reach Salesforce?
